We start with the freshest products, delivered daily

 First, we remove the skin from the fresh filet

 

 

Each portion is then cut to our specifications

 

 Once skinned and cut into proper portions, the salmon is properly stored  and ready to use

 

 

The guest orders their salmon dish and it is cooked to order on our char-broiler

 

 

The seasonal vegetables are assembled: mixed greens, tomatoes, lemon, asparagus in the summer, winter squash during the cold months...when the salmon has finished grilling it is placed atop the salad

 


Final touches are made and it is prepared for the guest.
